One of my plans for summer is to visit my local Farmer’s Market each week. This week I picked up spinach, onions, and cilantro (among other goodies). I love experimenting in the kitchen and trying new recipes. Somehow lately I just haven’t made the time.
So when I returned from the Farmer’s Market, I decided to put my ingredients to good use with the Chickpea Medley recipe I had seen on Oh She Glows.
I have a bit of an obsession with collecting recipes. I love pouring through my cookbooks, tearing recipes from magazines, and stumbling upon a great food blog.

It was an experiment because I don’t often opt for dried beans, but it was simple. As you can see it made a big batch that will last me all week. It’s much easier to eat healthy when I’m prepared.
So I guess it’s actually a “healthy obsession” after all!
